The color restoration of crudely pressed soybean oil is more remarkable than that of other oils, and the complex changes caused by the automatic oxidation of oils may be the basic reason.This phenomenon can be prevented by reducing the moisture content of raw materials. This method is widely used, which basically solves the color of soybean oil.
In addition to fat, some non-oil substances are brought into the crudely processed soybean oil. In the unrefined crude oil, there are 1%-3% phospholipids, 0.7%-0.8% sterols, a small amount of proteins and wheat germ phenol, etc., which can easily cause rancidity. Therefore, if the impurities are not removed by hydration, the soybean oil is not suitable for long-term storage.
